Chef Jeanette & Crosby in Dallas Morning News Food Article

Chef Jeanette and Crosby appeared in a Dallas Morning News article this week on the health benefits of quinoa.To read Quinoa stars as gluten-free rice alternative, written by DMN's freelance food guru Kim Pierce, click here.

Chef Jeanette created a new recipe using this ancient grain which was included in the piece - Quinoa Timbales with Dill (pictured to the right). If you haven't tried quinoa before we hope this article will inspire you to do so. It's super easy to prepare and as the article quotes Jeanette, "It's a wonderful blank canvas you can take in any ethnic, culinary direction. It's most similar in texture to couscous. And it can easily substitute for rice or bulgur in recipes from salads to desserts." Quinoa is a complete, stand-alone protein which makes it a perfect staple in a vegetarian and/or vegan diet.
