Black Bean and Fresh Corn Enchiladas (Lacto)  Black beans, summer sweet corn and creamy diced   avocado filled enchiladas are covered in a mild red sauce and topped with chopped green onions and Veggie Cheese (Veggie cheese contains a trace of casein, avoid if you are a strict vegan).

Our spicy Fire & Ice Beans are a mixture of kidney and pintos served up with nutritious Wheat Berry pilaf and accompanied by our famous Whole Corn Bread Muffins.

Frittatas: New Potato, Thyme and Caramelized Onion or Mushroom and Baby Spinach (Lacto-ovo)  Frittatas are like a dense quiche and can be served warm or at room temperature. We offer two delicious flavors to choose from. A slice of frittata in the morning provides a filling and nutritious breakfast. Paired with a cup of our cream of tomato basil soup and/or a tossed salad our frittatas make a satisfying lunch or light dinner. We use only organic, free-range eggs.

Gingered Greens and Tofu with Coconut Jasmine Rice (Vegan)  Broiled tofu and nutritious greens (Chinese cabbage, bok choy, and kale) seasoned with grated fresh ginger root, lime juice and a splash of chili oil. Served with jasmine rice steeped in lite coconut milk, ginger and aromatic spices. (NOTE: This is a stir-fry, and best consumed within 24-48 hours of ordering)

Grilled Vegetable Couscous (Vegan)  Portobello mushrooms, red onion, carrots, zucchini, summer squash, asparagus and corn are marinated in a light balsamic vinaigrette, grilled over an open flame and tossed with couscous. Accompanied by a side salad served with garlic vinaigrette. Simply pour a glass of wine, or sangria, and you have an instant light, but filling, summer meal.

Mango Green Chili Quesadillas with Rice and Black Beans (Lacto)  We use authentic Mexican Chihuahua cheese in our quesadillas. Served with a scoop of black beans, Mexican rice and a side of vegan sour cream and salsa.

Mexican Stuffed Shells (Lacto)  Jumbo pasta shells are stuffed with ground beef substitute, green chilies and cheese and topped with a picante tomato sauce and french fried onions served with a scoop of Mexican rice.

Sweet and Sour Vegetables with Tofu (Vegan) Stir-fried tender crisp vegetables, pineapple, and pressed tofu in a zesty sweet and sour sauce served with a scoop of Jasmine rice.

Tex Mex Pasta with Creamy Corn Sauce (Vegan)  Penne pasta, diced red bell pepper, onions, pinto and black beans in a creamy corn sauce and garnished with cilantro.

Tofu Lettuce Wrap Platter (Vegan)  Crosby’s Tofu Lettuce Wrap Platter makes a perfect cool and crisp summer meal! It’s a “build your own” extravaganza consisting of: organic tofu strips lightly pan seared in toasted sesame oil; Crosby’s Asian Slaw (finely shredded red and green cabbage, carrots, and green onions bathed in our signature vinaigrette dressing); homemade spicy peanut dipping sauce; and lots and lots of fresh crunchy lettuce leaves to wrap everything in! Tofu Tamale Pie (Vegan)  Our version of pot pie with a Southwestern twist. A layer of cornbread crust tops a mildly spicy bean, vegetable, tofu and ancho pepper filling. Served with a side salad and our herbed balsamic vinaigrette.

Veggie Soft Tacos (Vegan)  Our veggie soft taco filling is chock-full of nutritious ingredients: sautéed broccoli, carrots, corn, onion, tomatoes, and spinach all seasoned with Mexican spices. Served with two whole-wheat flour tortillas, vegan sour cream and salsa. Accompanied by a side of our yummy Borracho Beans. Note: If your diet allows lactose, these are extra delicious topped with shredded sharp cheddar cheese -Yum!

Veggie Fajitas (Vegan)  Onions, bell peppers, zucchini, summer squash, fresh corn kernels, black beans and tempeh strips marinated in a spicy fajita sauce and grilled over an open-flame.
