Antipasto Salad

 

Antipasto Pasta Salad (Lacto - can be made vegan by omitting the mozzarella)  All your favorite antipasto selections - pepperoncini, mozzarella, kalamata black olives, sun dried and fresh tomatoes, garbanzo beans tossed with corkscrew pasta and a delicious homemade dressing.

Artichoke Brown Rice Salad   A delicious and very nutritious brown rice salad with shades of green – artichokes, bell peppers, celery, cilantro and green onions in a curry mayo dressing. 

Asian Slaw Red and green cabbage, shredded carrots, green onions and snow peas in a toasted sesame oil dressing.

Autumn in Vermont Salad Organic mixed field greens, dried cranberries, dried blue berries and candied pecans served with Crosby's homemade Vermont Dressing ~ a refreshing sweet and sour dressing made with a splash of Vermont maple syrup.

Baby Greens, Fresh Veggie Salad with Creamy Avocado Dressing and Sunflower Seeds  Mixed baby field greens with raw corn kernels, red onion rings, bell pepper, carrot coins, green onions, cherry tomatoes and cucumber slices served with our creamy, slightly spicy, avocado dressing and sprinkled with crunchy sunflower seeds.

Beth Levine’s Three Bean Salad with Olives  Kidney beans, garbanzo beans and black-eyed peas in a vinaigrette dressing tossed with green and red bell peppers, red onion and sliced pimiento-stuffed olives. 

Broccoli Salad  This is one of our most requested recipes.  Raw broccoli, sunflower seeds, dried cranberries and diced red onion in a creamy vegan mayo-based dressing. 

Cranberry Couscous Salad  Tri-color mixed vegetable couscous with diced carrots, cucumbers, dried cranberries, green onions & toasted almonds dressed in a balsamic reduction.

Cranberry Spinach Salad Tender fresh baby spinach leaves tossed with dried cranberries, slivered almonds and crunchy sesame seeds. Served with our delicious poppy seed dressing.

Crosby’s House Salad  Mixed Greens, candied walnuts, fresh pear slices and roasted root-vegetable ravioli tossed in a rosemary-scented balsamic vinaigrette.  If you haven’t combined pasta, fresh greens, fruit and nuts in a single salad before, you need to experience this salad!   

Crunchy Cabbage Slaw  Shredded cabbage, green onion, toasted sliced almonds and sesame seeds, and crunchy Japanese curly noodles tossed in an Asian vinaigrette.

Curried Cole Slaw with Peanuts Our famous cole slaw is made with finely shredded green cabbage and carrots, sliced green onions, crunchy peanuts and chewy golden raisins bathed in a creamy curried cole slaw dressing.

Dilled Pea Salad  A deliciously different pea salad - green peas, sliced green onions, in a vegan sour cream dressing seasoned with dill and curry. 

Greek Salad (Lacto-ovo)  Hearts of romaine, cucumber rounds, tomatoes, black olives, red onions and feta cheese in our delicious homemade oregano feta dressing.

My Big Not-so-Fat Greek Salad (Lacto)  A rice based salad made with Basmati rice, sun dried tomatoes, chickpeas, sautéed spinach, olives, toasted almonds, capers, and feta dressed lightly with extra virgin olive oil and fresh oregano.

Raspberry Spinach Fresh baby spinach, whole raspberries, red onion and carmelized pecans in a tangy vinaigrette.

Ruby Tuesday Coleslaw  Red cabbage, red onions, red apples and red grapes in a red raspberry balsamic reduction. 

Spring Greens and Blues (Lacto) Mixed field greens, blueberries, feta and candied pecans in a sweet and tangy raspberry vinaigrette.

Strawberry Spinach  Fresh baby spinach, sliced strawberries and sunflower seeds in a refreshing poppy seed dressing.

Summer in Vermont Salad Crosby’s Summer in Vermont Salad is comprised of mixed spring greens, cucumber rounds, cherry tomatoes, radishes, celery slices, carrot coins and sunflower seeds served with our delicious Vermont Dressing which has a hint of Vermont maple syrup sweetness.

Tossed Mixed Salad  Comprised of mixed greens, cucumber rounds, cherry tomatoes, celery slices, carrot coins, and sunflower seeds.  Served with our wonderful fresh herb balsamic vinaigrette.

Twice Baked Potato Salad (Lacto or vegan)  A chunky and filling potato salad made with the “skins on” and spiked with green onions, sour cream, and sharp cheddar cheese.

Fresh Herb Balsamic Vinaigrette  A bright tasting balsamic vinaigrette made with garden fresh basil and parsley. Perfect over a mixed green salad, or for dipping raw veggies in. It's also wonderful drizzled over fat slices of ripe tomatoes layered with organic mozzarella cheese.

Vermont Dressing  This is a refreshing sweet and sour dressing with a splash of Vermont maple syrup - a sure-fire way to liven up your favorite salad greens.

Creamy Cucumber Dill  This dressing is wonderfully creamy and rich. No one will guess it is vegan! It's a perfect substitute for fat-laden Ranch Dip - great over salad greens, or as a raw veggie dip.
