Roasting
Crosby uses a local micro-roaster to toast its beans in small, quality-controlled batches. All of our coffee is roasted fresh to order, when you place your order
and not one day before. Our roaster uses a traditional drum roaster to achieve a perfect combination of consistency and depth of flavor. Since our coffee is crafted
locally by hand, we can roast it today, and have it in your mug tomorrow. Our exceptional freshness provides an unforgettable coffee that you won’t find
anywhere else!

Organic
Organic coffee beans are grown without chemical pesticides and fertilizers. Because coffee is typically grown at high altitudes,
when chemicals are used, the result can be extensive damage to the water supply to everyone downhill. Buying and drinking organic coffee promotes the
health of the environment, the health of the coffee grower, and the health of the coffee drinker.

Fair-Trade
Many coffee farmers around the world receive payment for their crops that are lower than the costs of production,
forcing them into a cycle of poverty and debt. Fair Trade Certification is an alternative approach to the coffee market that puts
more of the profit in the hands of the farmers.
The Fair Trade Certified label guarantees that farmers and workers received a fairer price for their product. Coffee companies
that import Fair Trade coffee guarantee farmers a minimum price per pound. This can be as much as a three- or even four-fold increase in what
some farmers might otherwise receive for their crop. This increase is possible in part because the Fair Trade system eliminates a number of
middlemen where much of the profit sometimes goes in the open coffee market. The Fair Trade price means that farmers can feed and support
their families.

Shade Grown
Shade-grown coffee retains the natural flora around and over the coffee plants, providing needed shade, nourishment and erosion control beneficial
for a healthy environment.
Shade-grown coffees also provide critical habitat for migratory birds and other species. The Smithsonian Migratory Bird Center has documented
sightings of up to 150 different bird species in a shaded coffee farm compared to
an un-shaded coffee farm of 5 to 20.
